Make Fish Tacos With Cod For Your Next Themed Party

Monday, August 9, 2010 noi

The next time you have a south-of-the-border themed party, choose fish tacos for the main course. They are easy to make and taste great. For fish tacos, you will need a firm, white fish, such as cod or halibut. Alaska Cod is perfect. Mild, moist, flaky, and lean, it is the highest quality of cod filet available. It is also quite affordable, due to its abundant supply throughout the year. Plus, sustainable fishery practices in Alaska make fish harvested in the clean, icy waters of the Bering Sea and the Gulf of Alaska a tasty, healthy, and environmentally conscious choice. Avocado and fish go great together. Make the following recipe for fish tacos with avocado at your next fiesta, and you and the tacos are both sure to be a hit.

Avocado Fish Tacos

What You Will Need:

4 avocados

4 tablespoons of lime juice

2 pounds of Alaska Cod, cut into 2-inch chunks

½ cup of flour

2 teaspoons of salt and pepper

½ cup of oil for frying

4 cups of red cabbage, shredded or sliced finely

¾ cup of poppyseed dressing

6 8-inch flour or corn tortillas

Cilantro

2 limes and/or lemon, sliced

Instructions:

1. Cut the avocados in half, remove the pits, and peel. Cut them into chunks and splash lime juice on them. Set them aside while you toss the cabbage, poppyseed derssing, and 1 teaspoon of salt and pepper, in a medium-sized bowl. Set this aside, as well.

2. Using a fork, mix the flour and 1 teaspoon of salt and peper in a deep plate. Dip the chunks of Alaska Cod in the flour mixture until they are covered on all sides. Heat your oil in a large skillet over medium heat. Once the oil is heated, put in your fish chunks, cooking them until they are nicely browned on all sides.

3. You can serve your tacos build-your-own style, by putting out the different ingredients in separate containers so everyone can use the ratios they want. Or, assemble the tacos yourself before serving. To do this, distribute the cabbage mixture among the tortillas. Then, add your chunks of cooked Alaska Cod and avocados. Garnish with cilantro and lime and/or lemon slices.

This recipe yields six servings. If you are having a big party, or if people are going to want more than one taco each, increase the ingredients as needed. Then, as they say in Spanish, Buen provecho!
